Fast, Accurate Result for Sprout Damage

Wheat is suject to sprout damage when wet weather prevails at harvest. Amylase activity is increased in sprouted wheat, resulting in potential quality issues for the flour mill and bakery. Traditional tests for sprout damage include the Farinograph and the Falling Number, which utilize physical tests to predict amylase activity and thus, bake quality. Optimal Falling Number values are typically between 250 and 350.

VICAM's WheatRite is a simple way to determine Falling Number values, with no heating or mixing. WheatRite uses an immunochromatography method, which detects amylase activity and gives results in traditional Falling Number values.
